Blood orange & thyme soda

INGREDIENTS

SERVES 200ML CORDIAL

3 blood oranges
3 small sprigs thyme, or more to taste
100g golden caster sugar crushed ice or ice cubes
sparkling water or soda water

METHOD

One of my favourite summer drinks, plus the cordial makes a great cocktail mixer.

Pare the rind from the oranges, cut into thin strips and put into a pan with the thyme. 

Pour 100ml cold water into the pan, bring to the boil and simmer for 5 minutes to extract the flavour from the rind. Add the sugar and bubble until syrupy.

Remove from the heat, stir in the reserved orange juice and strain into a sterilised bottle or jar.

To serve, put a handful of crushed ice into each glass, pour in

3-4 tablespoons of cordial and top up with sparkling water. The cordial keeps up to a week covered in the fridge.
