Carrot, celery & ginger breakfast juice

INGREDIENTS

SERVES 1

3 carrots, roughly chopped
1 celery stick, roughly chopped
about 25g root ginger, roughly chopped
15g flat-leaf parsley

METHOD

You’ll need a juicer for this recipe and I know that’s quite an investment but as those of you that have one will testify, once you’ve spent the money, you won’t look back. Refreshing, energising and so unbelievably good for you, fresh juices really are all they’re cracked up to be.

Chop the carrots, celery and ginger into chunks, then put through the juicer along with the parsley. Pour into a glass and enjoy.

MY SECRET

Of course vary the flavour as you prefer. Mix it with pomegranate or cranberry juice if you like more sweetness or with grapefruit or a squeeze of lemon if you want it more sour. Drink it fresh as it discolours in the fridge, and if you prefer it cold then chill the vegetables first rather than dilute it with ice.
